Stawberry Salad for Breakfast

I enjoy getting up early on Sunday mornings when the city is still sleeping in and the sun is barely rising. While my sweety is still snoring in bed, I pop down the street for a big cup of coffee and duck into the supermarket to buy something to whip up for breakfast. Usually I let my cravings dictate....sometimes it is brown sugar banana oatmeal, sometimes Mexican chilaquiles, sometimes classic eggs and bacon.


As we are in the middle of summer now, strawberries were all over the store, so I had to get some. Adding some extra flavor zip to wake up your sleepy Sunday taste buds is very simple.

Strawberry Salad

1 quart fresh, seasonal strawberries

zest and juice of one lemon

handful chopped mint leaves

splash of vanilla extract or orange juice



Wash and halve the strawberries. I like them halved because they have a sweet little heart shape that way...romantic, no? Use a microplane to zest an entire lemon, then half it and squeeze the juice over the berries. Finely chop and mix in a handful of mint. Give them a splash of vanilla extract or orange juice, stir and add to your Sunday morning breakfast.
